CHUTNEY PEAR - APPLE SOUP WITH WATERCRESS


INGREDIENTS: (for 3 pots 250g)
comics or 3 pears Williams
1 apple Golden
1 lemon untreated
200 grams of onions
100 gr currants and sultanas
25cl cider vinegar
a bird pepper
30 g fresh ginger
1 teaspoon coriander seeds
2 pinches of nuts nutmeg 1 stick
vanilla
80 grams of brown sugar
4 pinches of pepper

PREPARATION:
Brush the lemon in the water, wipe- and finely grate the zest.
Squeeze the fruit. Peel the pears and apples, cut the flesh into small cubes and sprinkle with lemon juice.
Peel the onions. Peel ginger and grate it. Cut peppers into 2 lengthwise, remove seeds and cut it into thin slices.
Pour into a large pan the vinegar, sugar and lemon zest. Bring to a boil and let frémir5 min.
Add the diced fruit, onions, raisins, grated ginger, strips of pepper and all other spices.
Cook Chutney 20 to 25 minutes over medium heat, stirring gently from time to time until no more liquid remains.
Cool before serving or put in jars.

This Indian sweet and sour condiment is served cold with white meats, poultry, fish. For my part I put it as an accompaniment to chicken curry.
